What a wonderful turnout for the DeLano Farms CSA open house last night. The staff enjoyed meeting our CSA shareholders and sharing in the excitement. As promised, here is the delicious Cilantro pesto recipe which was available for sampling at the open house. We look forward to seeing all of you at the end of the month! First pick-up starts on May 31 during your selected pick-up schedule.
Cilantro Pesto
Also known as fresh coriander and Chinese parsley, Cilantro pesto makes and excellent pasta sauce. Combine with butter and serve with green beans, summer squash, and zucchini or use it to make salad dressing and dips.
11/2 cups loosely packed fresh cilantro leaves
1 large clove garlic
¼ cup freshly grated Parmesan cheese
3 tablespoons pine nuts
1 teaspoon minced lime zest (optional)
5 tablespoons olive oil
Salt and freshly ground black pepper
Combine the cilantro, garlic, cheese, pine nuts, and lime zest in a food processor or blender. Process to mix. Continue to blend slowly while adding the olive oil. Season to taste with salt and pepper and process to the desired consistency. Let stand for 5 minutes before serving.
Makes about 2/3 cups
