Once you recognize garlic mustard, you’ll see this plant everywhere. It damages ecosystems by crowding out native plant species. It’s a bully whose numerous seeds spread far and wide. It overwinters under the cover of snow, then gets a jump start when spring arrives.
Garlic mustard is tasty, versatile, and nutritious. Its greens have substantial amounts of vitamins A, C, E and some of the B vitamins. The plant also contains potassium, calcium, magnesium, selenium, copper, iron and manganese, as well as omega-3 fatty acids.
Every part of the plant is edible, and it’s available year-round. Due to its invasive nature, gathering as much of it as you want actually helps the environment!
